The stark contrast between land and sea has been our greatest source of inspiration; from the botanicals we use to flavour Whitby Gin and Rum, to the packaging and design. We explore the rugged coastline and dip below the ocean surface to source our diverse range of native botanicals.
Heather Flower is collected in collaboration with the North York Moors Authority between July – September. We work with SeaGrown a seaweed farm based 5 miles offshore from Scarborough to gather forgotten flavours from the sea including sugar kelp and pepper dulse. Yorkshire Honey is one of our favourite ingredients and makes it’s way in to a number of our Editions.
